The Blanc de Blancs from Maison Brice is an exceptional blanc de blancs champagne , renowned for its finesse and delicacy. Ideal for an aperitif, it seduces with its fruity and floral notes. This unique cuvée is composed of half Chardonnays from the Grand Cru terroirs of Bouzy, located on the Montagne de Reims, the birthplace of the Brice family. The Chardonnays from Bouzy bring a beautiful minerality thanks to the limestone soil, as well as a marked aromatic richness. The other half comes from the Premier Cru terroirs of Grauves, at the end of the Côte des Blancs, offering Chardonnays that are rounder and fruitier than those, usually more taut, from the Côte des Blancs. Christophe Constant, cellar master of Maison Brice, developed this cuvée by vinifying the majority of the juices in stainless steel vats, while a small portion was aged in 350-liter barrels, thus adding a touch of complexity to the whole. To preserve the mineral tension of the champagne, he chose not to carry out malolactic fermentation. The Extra Brut dosage (3g/l) highlights the aromaticity of the Chardonnays. The result is an extra brut champagne with a golden color and silvery highlights, with remarkably fine bubbles. On the nose, the Blanc de Blancs Brice reveals generous aromas of white flowers, followed by notes of white fruits such as pear and a touch of citrus. On the palate, it offers a round attack and a silky texture, with fruity flavors and a persistent complexity. The finish is long and resonant. This remarkable cuvée is perfect for an aperitif, but it also pairs wonderfully with seafood dishes, such as seafood, fish, white meats and ceviche. Serving temperature: 10°C.
