The Les Hauts d'Épernay cuvée, produced by Philippe Lancelot, is an organic vintage champagne with remarkable balance, ideal as an aperitif or to accompany fish and shellfish. The 2018 vintage marks the third edition of this cuvée, with the aim of best transcribing the DNA of each vintage through their pure and unique character. Les Hauts d'Épernay 2018 is a meticulous blend of Chardonnay (48%), Pinot Noir (35%) and Meunier (17%). The grapes come from vines aged 35 to 50 years, planted on the elevated terroirs of Épernay, notably the “Boissimon” and “Saint Antoine” plots. Harvested at optimum maturity, this cuvée is vinified in vats and oak barrels, with a minimal addition of sulfur and a very light dosage to preserve the natural balance of the Champagne. This organic extra brut champagne offers a beautiful concentration and great tension. Its golden and brilliant color reveals aromas of vine peach, sweet orange and white fruits. Produced in limited quantities, only 3484 bottles of this exceptional cuvée are available. Whether at the start of a meal or as an aperitif, this champagne reveals all its potential at a temperature of 12 to 14 ° C.
