The Cramant cuvée , created by Philippe Lancelot, is a vintage Blanc de Blancs champagne that stands out for its delicate structure and rich aromatic palette. This champagne, dosed at only 0.8 gr/l, is the result of blending all the estate's plots located on the Grand Cru terroir of Cramant, with the exception of the "Les longues verges" plot. The Chardonnays used were planted between 1951 and 1989, with an average age of 40 to 45 years, and all the plots are cultivated organically according to the Demeter specifications. The year 2018, marked by overall heat, produced grapes of optimal maturity and concentration. The Cramant champagne was partially vinified in stainless steel vats to preserve the imprint of the terroir and its chalky freshness, and partially in oak barrels to enrich the aromatic expressiveness. The vinification, carried out without the addition of sulfur, allows the champagne to fully reveal its character. This vintage champagne has a golden color with fine and lively bubbles. On the nose, it first reveals notes of white flowers, followed by aromas of yellow and ripe fruits, as well as pastry and slightly spicy nuances. On the palate, the attack is tense and frank, offering a superb verticality. A magnificent, creamy and fruity material marks the mid-palate. The finish, meanwhile, vibrates on the palate for long seconds. This champagne can be enjoyed as an aperitif. It is also perfect for the start of a meal. Serving temperature: 12°C.
