Oenophile Non Dosé 2018 is a vintage champagne developed by Didier and Olivier Gimonnet, it highlights the grandeur and complexity of the great Chardonnays of the Côte des Blancs. Created in 1985, well before the current trend of non-dosed champagnes , this cuvée is a pioneer in the field of Brut Nature and today marks its 20th vintage without dosage, selecting only the very great vintages. This Blanc de Blancs is a meticulous blend: 45% Chardonnay from Cramant Grand Cru, 30% Chouilly Grand Cru, 3% Oger Grand Cru, and 22% Cuis 1ᵉʳ Cru. The vinification and aging in stainless steel vats preserve the purity of the terroir, while the malolactic fermentation brings roundness and suppleness. After a prolonged aging of 4 years in the cellars of the house, this champagne is non-dosed, thus preserving all its freshness and purity. To the eye, this cuvée is distinguished by a pale golden color with luminous reflections, accompanied by fine elegant bubbles forming a persistent bead in the glass. The nose opens with a complex aromatic palette, beginning with notes of white-fleshed fruits such as Granny Smith apple and juicy pear, enriched with fresh lemon zest. Mineral and chalky nuances emerge, evoking the distinctive terroir of the Côte des Blancs. On the palate, the 2018 Oenophile Non Dosé delivers a taste experience that is both lively and chiseled. The purity of the Chardonnay is fully deployed, accompanied by a vibrant tension that highlights the flavors of fresh fruits, notably crisp green apple and juicy white peach. The minerality of the terroir is manifested by chalky and saline notes, providing additional depth. The structure is delicately creamy, evidence of a well-controlled aging on lees. Produced in only 7,500 copies, this vintage stands out for its rarity and excellence, ideal for lovers of authentic and refined champagnes.
