PHILIPPONNAT Grand Blanc Extra-Brut is a vintage blanc de blancs champagne composed exclusively from Chardonnay from the villages of Mareuil-sur-Ay, Vertus, Trépail and Verzenay. First press exclusively from Premiers and Grands Crus. This cuvée offers a unique opportunity to explore a variation of the House's style in the form of a prestigious Blanc de Blancs. In 2016, the climatic conditions followed the continental trend of the decade with a mild and wet winter followed by a hot and dry summer. The maturation of the grapes, favored by a cool end of summer, produced juicy, ripe and concentrated fruits, promising a spectacular vintage. This extra brut champagne is made from the first presses of Chardonnays. The champagnes are partially vinified in stainless steel vats with partial malolactic fermentation, and partially in undergrowth without malolactic fermentation. The Grand Blanc preserves the nobility and purity of its origin thanks to its Extra-Brut dosage of 4.25 g/l. The cuvée has rested between 6 and 8 years in the cellars of the House, thus developing its aromas and highlighting the secondary and tertiary nuances, typical of prolonged aging on lees. Visually, this cuvée is distinguished by its light gold color and its fine and abundant effervescence. On the nose, it reveals fresh and expressive aromas of ripe fruits, notably mirabelle plum and apricot, to which notes of wildflower honey mingle upon aeration. On the palate, this blanc de blancs champagne is fresh and creamy, with delicate citrus notes. The finish, long and persistent, offers a beautiful mineral touch and some spicy notes. The Grand Blanc from Maison Philipponnat is ideally enjoyed as an aperitif around 7°C. However, it can also be enjoyed at the table at around 10°C to accompany white fish or shellfish.
