BRUNO PAILLARD Cuvée NPU "Nec Plus Ultra" is a prestigious champagne born from the idea of creating the greatest Champagne possible, whatever the constraints. As always with Maison Bruno Paillard, only the first pressing was retained but an essential characteristic of the NPU is that the first fermentation was carried out in small wooden barrels where the wines spent their first 10 months, developing woody aromas. This exceptional cuvée is only produced in the greatest vintages, the grapes selected to create this cuvée come exclusively from 7 Grands Crus among the most sought-after in Champagne: Oger, Le Mesnil-sur-Oger, sometimes Chouilly and Cramant for the Chardonnays, and Verzenay, Mailly, Bouzy for the Pinot Noirs. The duration of aging in the bottle on lees is exceptional: at least 10 years in the cellar. The dosage during disgorging is Extra-Brut (3 g/L).
