The Non Dosé perpetual cuvée, signed Bonnet-Ponson, is distinguished by its harmonious balance between roundness and liveliness as well as its aromatic complexity. This brut nature champagne is the result of a meticulous blend of 35% Pinot Noir, 30% Chardonnay and 35% Meunier. They come from the Premier Cru terroirs of Chamery, Vrigny and Coulommes la Montagne, located in the Montagne de Reims. The vines, aged 35 years, are planted on varied soils (clay-limestone, sandy and silty), contributing to the aromatic richness of the champagne. The vinification of this Non Dosé cuvée from the Bonnet-Ponson house is carried out 85% in stainless steel vats and 15% in oak barrels, followed by aging on fine lees for 8 months. Non-dosed, this cuvée preserves the authenticity and natural character of the champagne. When tasted, this champagne reveals notes of apple, pear, white peach and citrus fruits, evolving towards aromas of brioche and toast. The aromatic richness and structure in the mouth of this Cuvée Perpetuelle Non Dosé make it an excellent choice as an aperitif or to accompany oily fish and white meats. Serve at a temperature of 10°C.
