The Poétique de la Terre cuvée, signed by Mailly Grand Cru , stands out as a unique champagne. It was specially designed to highlight the identity of the Pinot Noirs from the Mailly Grand Cru terroir, vinified in the woods. The greatest Pinot Noirs from Mailly-Champagne were selected for thisblanc de noirs champagne . They mainly come from the remarkable 2016 harvest (70%) and are supplemented by a reserve of Pinot Noir. Then, a third of the champagnes were vinified in the woods before being bottled. The cuvée then rested for seven years in the chalky cellars of Mailly. The other particularity of this cuvée is its marketing in two stages. First, the first half of the 6,792 bottles produced was launched in 2023, under the name Variation 1. Then, the second half will continue to age for several more years in order to offer a more complex and mature aromatic expression. La Poétique de la Terre XVI.1 Mailly Grand Cru presents itself with a deep gold color and fine bubbles. On the nose, this champagne reveals toasted, roasted and fruity notes. On the palate, we perceive the energy of the great Pinots, accompanied by the roundness brought by the aging in wood, offering a fruity and perfectly balanced taste experience. This great extra brut champagne will pair harmoniously with dishes of character, thus sublimating each tasting.
