The Terre d'Illite cuvée is a unique vintage champagne that highlights the particularities of an exceptional year. The name of this cuvée comes from the green clays present in the soils of the estate. These shallow soils, composed of very draining calcareous marl and a thick vein of green clay called "Illite", retain moisture even during long periods of summer drought. The finesse and purity of these clays guarantee a constant supply of water to the grapes. ThisBlanc de Noirs champagne is made up of 80% Meunier and 20% Pinot Noir, all from Cuisles, a commune in the Marne Valley. The 2019 vintage is considered one of the best in recent years in Champagne, offering absolute balance. Selected from the best juices, this cuvée is vinified in stainless steel vats. The malolactic fermentation, carried out to add roundness, is followed by filtration on fine earth without fining. The bottles have aged for 36 months in the cellars of the House and the champagne is dosed Extra-Brut at 2.5 g/L. This extra brut champagne goes perfectly with tapas cooked in olive oil, such as octopus, croquetas, pan con tomate and ham, peppers, patatas bravas, boquerones, or even prawns with chorizo.
