The Cuvée 1522 from Maison Philipponnat pays tribute to the year 1522, when the Philipponnat family settled in the village of Ay, in the heart of Champagne. In 2016, the climate was marked by pronounced variations: a cool and humid spring gave way to a dry and hot summer. In addition, these variations were punctuated by a heatwave at the end of August, followed by dry and sunny harvests that allowed the grapes to reach a beautiful maturity. These conditions particularly benefited the Pinot Noirs, whose maturity revealed an intense fruity character and a silky texture. The more classic Chardonnays stood out for their precision and freshness. This great vintage champagne is composed of 70% Pinot Noir, mainly from the vineyards of “Léon” in Aÿ and Verzy, and 30% Chardonnay from Mesnil-sur-Oger. Some of the wines were vinified in wood, without malolactic fermentation, in order to preserve a beautiful tension and develop a great aromatic complexity. After six years of aging on lees, this cuvée retains its original freshness while magnifying itself. Following disgorgement, the champagne, ample and tangy, is dosed Extra-Brut at 4.25 g/L. This champagne has an intense and brilliant gold color. On the nose, this champagne is expressive and gourmet, with aromas of red fruits, redcurrant jam and elderberry, enhanced by notes of pastry and toasted brioche. On the palate, it offers a creamy elegance with flavors of red fruits, cherry and blackberry. The finish is long and fresh, with subtle menthol notes. The Cuvée 1522 Grand Cru 2016 pairs perfectly with grilled or poached fish, thanks to its very dry character, and can also offer an interesting contrast with fatty poultry.
