BONNET-PONSON Seconde Nature 2020 is a non-dosed vintage champagne offering a perfect balance between freshness and aromatic richness. Composed of 45% Pinot Noir, 40% Chardonnay and 15% Meunier, this cuvée is made from the hearts of the cuvée. The grapes come from the places called "les Vigneules", "les Spectres" and "les Caquerets" located in the commune classified as Premier Cru of the Montagne de Reims. The vines, approximately thirty years old, benefit from a South-East exposure and are planted on clay-limestone soil with a sandy subsoil rich in fossilized shells. This cuvée is vinified without sulfites, without fining and without filtration, in barrels of 228 to 400 liters. Malolactic fermentation is carried out and aging on fine lees continues for 9 months. Undosed, it preserves the integrity and characteristics of the champagne. On the nose, Seconde Nature reveals floral notes followed by aromas of spices, citrus fruits and exotic fruits. The attack on the palate is lively, evolving towards a frank and pure middle. The vertical structure is accompanied by refreshing and lemony notes, enhancing the vinosity and fruitiness of the pinots. The finish is distinguished by a mineral, salivating and chiseled texture. Ideal to accompany the iodized flavor of seafood, this mineral and fresh cuvée will seduce champagne lovers. Award: 16 / 20 Gault & Millau.
