The 60/40 cuvée from Maison Elemart Robion is an extra-brut vintage champagne of great delicacy and subtle nuances, ideal for an aperitif or to accompany fine dishes. Made from 60% Chardonnay and 40% Pinot Meunier, this cuvée comes from the Lhéry terroir, located in the Ardre Valley. More precisely, the grapes come from plots exposed to the South-West, on soils composed of clay, limestone and sand, ensuring a beautiful maturity of the grapes. The vinification took place both in stainless steel vats and in oak barrels. Malolactic fermentation was carried out, and the champagne was aged on lees before being bottled in May 2019. During the 36 months of aging in the cellar, the bottles were regularly wristed. This technique involves stirring the bottles to resuspend the lees, which enriches the texture and aromas of the champagne. The bottles of the 60/40 cuvée were disgorged in June 2022 and dosed with 4 g/L of sugar. This cuvée has a bright and fluid color, a pale yellow with deep and sustained reflections. On the nose, this cuvée reveals delicate notes of acacia flowers, strawberry and pineapple. Aeration adds nuances of hazelnut, white peach, fresh pear and fresh butter. On the palate, it offers a fruity and pulpy material, supported by an acidity with orange accents. The mid-palate is marked by a limestone minerality and an iodized salinity. It is recommended to serve the 60/40 cuvée from Maison Elemart Robion at a temperature of 9°C.
