CAZALS Vintage 2016 Grand Cru by Delphine Cazals is a vintage Blanc de Blancs champagne that delicately combines the minerality of the Côte des Blancs with the richness characteristic of 2016. This year, marked by a mild and humid winter followed by a hot and dry summer, allowed the grapes to ripen optimally thanks to a cool end to the summer. This climate gave rise to juicy, ripe and concentrated grapes, making 2016 an exceptional year. This cuvée was vinified and aged in stainless steel vats to preserve its freshness. After bottling, it spent 7 years in the chalky cellars of the Cazals house, allowing the aromas to round out and develop a patina. Dosed as Extra Brut, this champagne retains a slight touch of indulgence. The intense and luminous golden hue of this extra brut champagne , accompanied by a fine and regular effervescence, immediately attracts attention. The nose offers a harmonious combination of ripe aromas and notes of cellar aging. Initial impressions reveal scents of peach and apricot, with a hint of caramelized apple. As it opens, the vintage champagne reveals nuances of golden brioche, toasted hazelnuts and honey, signs of its prolonged maturation on lees. On the palate, this 2016 vintage is distinguished by a creamy and generous texture, typical of high-quality vintage champagnes. The flavors of white and yellow flesh fruits persist, enriched with subtle notes of citrus jam and dried flowers. The balance between the ripeness of the fruits and the acidic freshness is remarkable, bringing a refined complexity to the palate.
