BRUNO PAILLARD Cuvée 72 is a champagne made from 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. It takes its name from 36 months in the bottle on lees + 36 months of rest after disgorging… or 72 months of maturation before shipping. This is a variation on the time and development of the complexity of the Première Cuvée Extra-Brut. In a way a “second release” for this cuvée 30 months after its initial release. This magnificent cuvée is made from a perpetual reserve of reserve wines with a new harvest, a selection of first presses of Meunier, Chardonnay and Pinot Noir, some of which undergo their first fermentation in barrels. An extra brut champagne evolving from fruity to more floral, spicy, even toasted aromas.
