DOM PÉRIGNON Vintage 2006 P2 is a prestigious, succulent and generous champagne . This exceptional cuvée is made from 100% Grand and Premier Cru, 62% Pinot Noir and 38% Chardonnay. This great vintage and mature champagne offers a beautiful minerality. Dom Pérignon Plénitude 2 2004 offers notes of cocoa, mocha, roasting, brioche and honey. The palate is chiseled, precise and tactile. Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a unique and singular creation that expresses both the character of the year and the character of Dom Pérignon.

The Plénitude concept (originally Oenothèque) has been in development for years at Dom Pérignon. After studying the natural course of aging that vintage Champagne seems to undertake, the winemaking team discovered that rather than improving in a steady, linear fashion (as is the case with many wines), it develops and matures through three defined stages in its life. The first release (P1) arrives approximately 8 years after harvest and is the style most consumers are familiar with. The second stage (P2) lasts approximately 15 years, during which time the cuvée makes a profound leap to a new level of quality where it will stagnate for many years in terms of improvement. Finally, the third Plénitude (P3) will see the Champagne age for another 20-30 years until it reaches its ultimate peak. Initially, these mature vintages were available as a limited edition called “Oenothèque,” but were renamed “Plenitude” in 2014.

TASTING NOTES

Nose : Discreet fruit aromas, which however emerge more clearly with tangy notes of pink grapefruit and blood oranges, finally giving way to fig. The additional time on lees enhances the minerality with the characteristic maturity of Dom Pérignon. We then find touches of cocoa, mocha, toasted hazelnuts, brioche and honey.

Palate : The wine evolves between tension and weightlessness. The precision is extreme, tactile and chiseled. The whole persists on a sappy, liquorice line.

Pairings : D om Pérignon Vintage 2004 Plénitude 2 offers many possibilities for pairings. It can be revealed by lobster, molé verde and cardamom. The combination of veal, dashi broth and spirulina will bring out the paradoxical facet of the wine while the pigeon, pistachio and kalamanci baklava will highlight its light. The wine is tactile: a green tomato sorbet will reveal its creamy character. The balance of the wine can also be explored through roasted pineapple, candied citrus peel and anise.

THE BRAND

In 1670, Dom Pérignon, a monk from the Benedictine Abbey of Hautvillers, a pioneer in oenology, boldly undertook the blending of several grape musts, thus inaugurating a new era in winemaking. This significant innovation quickly improved the quality of the wine by eliminating certain notable defects. A few years later, he revolutionized the industry once again by introducing the use of cork stoppers held to the bottle by hemp string impregnated with oil. This innovative method guaranteed the preservation of the freshness and effervescence of the wine, thus further improving the quality of the final product. Dom Pérignon did not hesitate to innovate, even reinforcing the bottles by adopting thicker glass to prevent any explosion due to the pressure of the effervescence. By cleverly exploiting the chalk quarries near his abbey, he created ideal storage conditions for champagne, maintaining its constant temperature and humidity. The first Dom Pérignon cuvée, from the 1921 vintage, was born in 1935, marking the beginning of a legend. Nearly 350 years after Pierre Pérignon’s first creations, Dom Pérignon continues to perpetuate its visionary legacy by constantly reinventing authentic luxury. This spirit of innovation inspires Richard Geoffroy, Cellar Master of Dom Pérignon champagne, when he creates each new vintage. According to him, each harvest is unique, and only those that meet Dom Pérignon ’s most demanding criteria will have the honor of becoming a vintage. This is an aesthetic vision rather than a simple value judgment, thus embodying the perpetual quest for the exceptional that drives Dom Pérignon.
