DOM PÉRIGNON Vintage 2006 P2 is a prestigious, succulent and generous champagne . This exceptional cuvée is made from 100% Grand and Premier Cru, 62% Pinot Noir and 38% Chardonnay. This great vintage and mature champagne offers a beautiful minerality. Dom Pérignon Plénitude 2 2004 offers notes of cocoa, mocha, roasting, brioche and honey. The palate is chiseled, precise and tactile. Dom Pérignon is only available as a vintage champagne and is only produced in exceptional years. Each vintage is a unique and singular creation that expresses both the character of the year and the character of Dom Pérignon.
The Plénitude concept (originally Oenothèque) has been in development for years at Dom Pérignon. After studying the natural course of aging that vintage Champagne seems to undertake, the winemaking team discovered that rather than improving in a steady, linear fashion (as is the case with many wines), it develops and matures through three defined stages in its life. The first release (P1) arrives approximately 8 years after harvest and is the style most consumers are familiar with. The second stage (P2) lasts approximately 15 years, during which time the cuvée makes a profound leap to a new level of quality where it will stagnate for many years in terms of improvement. Finally, the third Plénitude (P3) will see the Champagne age for another 20-30 years until it reaches its ultimate peak. Initially, these mature vintages were available as a limited edition called “Oenothèque,” but were renamed “Plenitude” in 2014.
