Francis Boulard & Fille Les Rachais is a vintage blanc de blancs champagne from a single plot cultivated biodynamically, called Hurtebise, following the lunar calendar. The soil of this plot is siliceous-calcareous. Composed of 100% Chardonnay, this champagne without dosage is distinguished by its beautiful personality, combining power and finesse. Fermentation is spontaneous thanks to natural indigenous yeasts. Vinification takes place on fine lees in aged oak barrels, with stirring carried out in Jour Fruit and Fleur. Malolactic fermentation is also carried out, and bottling is done in Jour Fruit. This champagne is unfiltered, thus preserving all its purity. The nose of this champagne is rich in aromas of ripe white fruits, citrus fruits, pastries and dried fruits, with small honeyed notes. On the palate, the champagne is ample, with a fine texture and a powerful and long expression. This champagne is served at 10°C, as an aperitif or with fish, poultry and white meats. For optimal tasting, let it air for a few minutes.
