The Blanc de Noirs cuvée from Palmer & Co is the result of blending the best vintages from the Montagne de Reims, the Côte des Bars and the Vallée de la Marne. Perfectly balanced between vinosity and roundness, this cuvée benefits from 50% Pinot Meunier, providing suppleness and fruitiness, while the Pinot Noir (50%) gives it power and density. In addition, with 35% reserve wines and 3 years of aging on lees, it guarantees a gourmet maturity. Dosed at only 6 g/L, it retains purity and freshness, creating a subtle contrast with the fruity body of the two pinots. Thus, the Blanc de Noirs cuvée offers a harmonious and delicate experience, perfect for those who appreciate the complexity and richness of well-balanced champagnes. ThisBlanc de Noirs champagne is to be served as a stylish aperitif. At the table, it will brilliantly enhance a veal medallion and its sage jus. Dare to accompany it with a lightly smoked fish; it will also marry wonderfully with the tasty and delicate flesh of crayfish. It works wonderfully with tagines. To better appreciate it, this champagne should be served at a temperature of 10°C.

TASTING NOTES

Nose : A very beautiful aromatic complexity with aromas of ripe fruits and spices.: notes of roasted apple, compote and peach.

Palate : We find a subtle combination of structure, length and liveliness. The bubble is fine as velvet. Aromas of pear, brioche and spices, notes of fresh walnut are revealed during tasting.
