Cédric Moussé's L'Esquisse cuvée brings together the estate's new and young plots, offering a fresh and lively expression of the Marne Valley. Composed of 70% Meuniers and 30% Pinot Noirs, this cuvée combines 30% of the year's base wine with 70% of wine from the previous harvest. The grapes come from the terroirs of Cuisles, Jonquery and Châtillon-sur-Marne, where the subsoils are distinguished by a unique composition: 20 cm of clayey topsoil, 40 cm of highly draining clayey sand, 30 cm of green clay and calcareous marl. The harvest is carried out by hand in 15 kg market gardening crates, in order to preserve the integrity of the bunches and limit self-pressing. Malolactic fermentation is carried out and the bottles age for 18 months, giving the wine a youthfulness and great drinkability. Once disgorging is complete, this champagne is dosed Extra-Brut (2 gr/l). Esquisse de Moussé Fils champagne is to be enjoyed as a summer aperitif, accompanied by almonds, dried fruits or watermelon, for a friendly and refreshing moment. To better appreciate it, it is served at a temperature of 9°C.
