The 2018 Gastronome cuvée , created by Maison Pierre Gimonnet & Fils, is a vintage champagne specially designed for starred restaurants. This champagne is produced in a small mousse, guaranteeing a particularly fine effervescence so as not to disturb the palate before a gastronomic meal. This Blanc de Blancs is distinguished by its freshness, elegance, substance and balance. It is made from a blend of Chardonnay from the Grand Cru and Premier Cru terroirs of the Côte des Blancs. The grapes from Cramant (39%) bring roundness, those from Chouilly (24.5%) and Vertus (10.5%) add fruitiness and elegance, those from Oger (3%) offer a spicy touch, and the Chardonnays from Cuis (23%) impart freshness and liveliness, signatures of the cuvée. This cuvée is vinified and aged in stainless steel vats to preserve the purity of the terroir, with malolactic fermentation that brings a touch of roundness. After aging for 3 years in the house's cellars, the champagne is dosed at 5 g/L to maintain a balanced, fresh and elegant style, typical of Gimonnet. The 2018 Gastronome cuvée has a pale yellow color with fine bubbles. On the nose, it reveals elegant and fresh aromas of citrus fruits, lemon, apple, pear and white flowers, followed by warmer notes of brioche, toast, almond and hazelnut. On the palate, this cuvée offers a beautiful lively and frank attack, with a very nice minerality, making each tasting memorable. Pierre Gimonnet's 2018 Gastronome champagne can perhaps be enjoyed as an aperitif or accompanies an entire meal. Serving temperature: 10°C.
